Don't put yourself in that situation by passing the truck on the right. And if a truck starts to pass you, then back off so if they do start to turn, they won't strike you.

But I guess the concept that, when approaching an intersection, the traffic to the left of you might actually want to turn right, and that you should EXPECT that to happen, is foreign to you.

So you have never been passed by someone on the left side going a higher rate of speed? Ever? Wow. That's truly amazing. You can't think outside your own self-declared boxes to save your life.
You have no control, car or bike, if a truck passes you on the left and then turns without notice. None. But understanding that might challenge your inability to consider different possibilities. So you default to foolishly insisting that a slower moving vehicle must have passed on the right.
This is why people like you (and Will LaT and my aspy relatives) don't make laws or run the world, no matter how much you think you have it all down to a dichotomous flow chart of black/white right/wrong. Because your oversimplifications do not adequately represent the world.
